Recipe: Summer Rolls with Crispy Sesame Tofu Strips
The summer rolls are freshly rolled and filled with crisp vegetables, aromatic herbs, and crispy pan-fried sesame tofu strips. The combination of freshness and crunch makes them light, balanced, and full of flavor. Thanks to pre-prepared components, the summer rolls can be perfectly portioned, prepared, and enjoyed flexibly – whether at home or on the go.

Why this dish is healthy for you
The summer rolls are light, fresh, and satisfying at the same time – perfect for days when you want to nourish yourself without feeling heavy. Crunchy vegetables provide many vitamins, minerals, and fiber, which support your digestion and keep you full for a long time. The sesame tofu brings plant-based protein and valuable unsaturated fatty acids, while the fresh herbs provide natural flavors and additional antioxidants. Together, they create a balanced dish that nourishes the body, provides energy, and can be ideally integrated into your batch cooking routine.
Here's how it's done
Prepared on Prep Day
- Tofu
- Vegetables (carrot, bell pepper, cucumber, herb mix)
- Mango
- Peanuts
- Signature Dip
- Chili Crunch
Preparation
Tofu
- Mix sesame seeds and starch in the medium mixing bowl.
- Take the second half of the tofu out of the airtight container and lightly moisten it with 1-2 tsp of soy sauce or water to ensure the breading sticks.
- Coat the tofu in the sesame-starch mixture and fry until crispy.
- Cut into strips.
Summer Rolls
Fill a large mixing bowl with warm water.
Soak rice paper.

Fill with:
Glass noodles (150 g), carrot, bell pepper, cucumber, mango, herb mix, tofu strips, and peanuts.
Roll tightly.
Serve with Signature Dip and Chili Crunch.

Our Prep Day Tip
For a smooth Prep Day, a few practical helpers are indispensable. Particularly important are mixing bowls with glass lids. They are excellent for storing marinades, dressings, or prepared ingredients without them drying out or mixing. Stainless steel mixing bowls are particularly robust and durable, and also hygienic and dishwasher-safe – perfect for the entire week.
Another indispensable helper in your kitchen is the wood fiber cutting board. It is antibacterial, gentle on knives, and can even be cleaned in the dishwasher. This allows vegetables, herbs, or other ingredients to be prepared particularly hygienically and conveniently.
Tip: Prepare sauces like Miso Dressing or Chili Crunch directly in the mixing bowls with lids, then you can portion them immediately and store them in the refrigerator.
