Recipe: Colorful Glass Noodle Salad with Crispy Sesame Tofu

The highlight of this recipe is the creamy Miso Dressing, which you can easily make yourself with Miso Paste. For extra crunch, use Chili Crunch – also known as Chili Crisp or Crispy Chili Oil. This turns the glass noodle salad into an aromatic, Asian delight that you can always serve fresh from your mixing bowl with lid.

Here's how to do it

Prepared on Prep Day


  • Signature Dip
  • Chili Crunch
  • Peanuts
  • Vegetables (carrots, bell peppers, cucumber)
  • Mango

Preparation: Glass Noodle Salad


  1. Cook/soak 150 g glass noodles according to package instructions.

  2. Add vegetables, mango, and herbs.

  3. Mix dressing in a small mixing bowl:

    3 tbsp Signature Dip, 1 tbsp lime juice, 1–2 tbsp water

  4. Mix everything.

  5. Top with peanuts and chili crunch.

Preparation: Sesame Tofu


  1. In the medium mixing bowl, mix sesame and starch.
  2. Take half of the tofu from the fresh-keeping container and lightly moisten with 1–2 tsp soy sauce or water so the breading adheres.
  3. Coat the tofu in the sesame-starch mixture and press on all sides.
  4. Fry until crispy in a pan.
  5. Glaze with 1 tsp miso butter. Serve glass noodle salad with tofu on top.

For a smooth Prep Day, a few practical helpers are indispensable. Mixing bowls with glass lids are particularly important. They are excellent for storing marinades, dressings, or prepared ingredients without them drying out or mixing. Mixing bowls made of stainless steel are particularly robust and durable, and they are also hygienic and dishwasher-safe – perfect for the entire week.


Another essential helper in your kitchen is the wood fiber cutting board. It is antibacterial, gentle on knives, and can even be cleaned in the dishwasher. This allows you to prepare vegetables, herbs, or other ingredients particularly hygienically and comfortably.

Tip: Prepare sauces like Miso Dressing or Chili Crunch directly in the mixing bowls with lids, then you can portion them immediately and store them in the refrigerator.
