Creamy Pistachio Pesto Pasta with Burrata

Recipe: Creamy Pistachio Pesto Pasta with Burrata
Ingredients
- 75 g pistachios
- 1 bunch basil
- 1 small garlic clove
- Zest of ½ lemon
- 1 tsp lemon juice
- 80–120 ml olive oil
- ½ tsp salt
- 250 g pasta
- 1 burrata
Pesto preparation
- Mix or puree pistachios, basil, garlic, lemon juice, olive oil, and salt in a mixing bowl.
- Add more oil if needed until smooth.
- Cook pasta.
- Mix with pesto, adding a little pasta water if necessary.
- Place burrata on top.
- Finish with some lemon zest and oil.
- Chop some pistachios and add them on top.
