Recipe: Zucchini Towers – gluten-free, light & vegan

These colorful towers of grilled zucchini, cashew cream, and pickled radishes add variety to your plate. Cashews provide magnesium, zucchini is low in calories, and the pickled radishes perfectly round off the flavor.

Preparation


  1. Divide zucchini slices into two towers depending on their size.
  2. "Glue" them together with cashew cream in between.
  3. Arrange pickled radish slices decoratively on top or between the slices.
  4. Drizzle with herb oil and sprinkle with edible flowers.
