Creamy cauliflower soup with crispy mustard ferment croutons

When the days get shorter and winter approaches, there's hardly anything more comforting than a creamy, aromatic soup. Our Cauliflower Soup with Mustard Croutons and a Fire Ferment Finish is just the right recipe for the hectic pre-Christmas season: easy to prepare, warming, and packed with nourishing ingredients.


As part of our Meal Prep Week, this recipe helps you get through the Advent season relaxed – without spending a lot of time in the kitchen. You prepare everything at your leisure, pour the soup into your favorite jar, and then enjoy it whenever you crave a portion of warmth.

Recipe: Cauliflower Soup with Mustard Croutons & Fire Cider

This winter dish becomes particularly exciting with the Fire Cider Ferment – a potent, fermented home remedy that not only adds depth and a slightly spicy, fresh aroma to your soup, but also turns it into a real power meal. The ferment is stirred in only when serving, so that its valuable properties are fully preserved.

Ingredients


  • 1 large cauliflower (approx. 900 g, divided into florets)
  • 1 potato (approx. 150 g, peeled, diced)
  • 1 onion (finely chopped)
  • 1 stalk celery (cut into pieces)
  • 1 tbsp olive oil
  • 1 tsp caraway seeds (lightly crushed)
  • 1.2 L vegetable broth
  • 20 g butter or 1 tbsp oil
  • 3 tbsp plant-based cream or crème fraîche
  • Salt, pepper, a little lemon zest
  • 4 tsp Fire Ferment (1 tsp per serving – stir in just before serving)

Mustard Croutons

  • 2 slices sourdough bread, cubed
  • 1 tsp mustard
  • 1 tsp Fire Ferment
  • 1 tbsp olive oil
  • Pinch of salt

Preparation


  1. Sauté onion, celery, and caraway seeds in olive oil.
  2. Add cauliflower and potato, cover with vegetable broth, and cook until soft for 20 minutes.
  3. Puree finely with butter and plant-based cream. Season with salt, pepper, and lemon zest.
  4. Mix bread with mustard, ferment, and oil, and toast on a baking sheet at 180°C for approx. 10 minutes until golden brown.
  5. Let the soup cool completely and divide into 4 containers.

2 × Round Fresh-Keeping Container (0.5 L) 1 portion each Pour soup directly in, seal airtight. Store croutons separately in a stainless steel or fresh-keeping container.
2 × Oleni Mason Jar (0.75 L) + Lunchbox Insert 1 portion each Pour soup to approx. 2 cm below the rim. Place croutons in the lunchbox insert in the jar (not directly in the soup).
