Healthy Winter Sandwich with Chicory and Caramelized Orange

Recipe: Winter Open Sandwich with Chicory & Orange

Ingredients (for 2 servings)


  • 2 slices sourdough bread
  • 1 small chicory (approx. 200 g)
  • 1 orange (alternatively blood orange)
  • 120 g cream cheese or vegan alternative
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup
  • Salt, coarsely ground red peppercorns

Preparation


  1. Prepare:

    Halve chicory lengthwise. Peel orange and slice. Prepare bread.

  2. Fry chicory:

    Heat olive oil in a pan.

    Roast chicory halves for 1–2 minutes per side until golden brown and lightly salt.

    Remove and set aside briefly.

  3. Caramelize orange:

    Quickly wipe out the pan, add honey.

    Roast orange slices for 30–60 seconds per side until edges are slightly caramelized and glossy.

  4. Toast bread:

    Slice bread on a cutting board and toast in a toaster or pan until golden brown.

  5. Serve:

    Spread cream cheese on bread slices.

    Top with chicory halves and 2–3 orange slices. Garnish with red peppercorns and a drizzle of olive oil.

Tip: Prepared in a Lieblingsglas and sealed airtight, the cream cheese can be perfectly stored – ideal for meal prep or a quick lunch the next day.
