To enjoy your chutney for a long time, you should fill it hot into sterile jars immediately after cooking and seal them airtight. Due to the vinegar and sugar in the recipe, your chutney is naturally long-lasting. Stored in a dark, cool place, it will keep for several months without problems. After opening, it belongs in the refrigerator and should be consumed within 1–2 weeks.

Recipe: Fruity Peach Chutney
Ingredients
- 3–4 ripe yellow-fleshed peaches (approx. 300 g without stone)
- 30 g dried apricots
- 2 shallots
- 1 clove garlic
- ~7 g fresh ginger
- 1 tsp coriander seeds (lightly crushed)
- 1 tbsp oil
- 100 ml water
- 100 ml apple cider vinegar
- 160 g gelling beet sugar (3:1 ratio)
- Salt & pepper to taste
Preparation
- Blanch peaches, peel, pit, and cut into approx. 1 cm cubes. Finely chop apricots as well.
- Sauté shallots, garlic, and ginger briefly in oil. Add peach and apricot cubes.
- Deglaze with water & apple cider vinegar, then stir in gelling sugar. Bring to a boil briefly and simmer vigorously for about 4 minutes.
- Season with salt and pepper. Pour hot into sterilized jars, seal, and let cool.
