Probiotic Winter Lemonade – Water Kefir with Blood Orange, Pomegranate & Rosemary

This probiotic winter soda made from water kefir, blood orange, pomegranate, and rosemary is exactly that: a refreshing drink that provides energy while strengthening your microbiome.

Recipe: Winter Lemonade from Water Kefir
Ingredients (for approx. 1.5 L)
- 1.2–1.5 L finished water kefir (from 1st fermentation)
- To the Guide and to the Kefir Starter Set
- 120–150 ml freshly squeezed blood orange juice (approx. 2–3 blood oranges)
- 1 small pomegranate (80–100 g seeds)
- 2 sprigs of rosemary
- Optional: 1 tsp sugar or honey for stronger carbonation

- Halve blood oranges and squeeze fresh juice.
- Remove pomegranate seeds.
- Prepare rosemary sprigs.

Start second fermentation
- Pour finished water kefir from the first fermentation into the Oleni Mason Jar | 2 L.
- Add blood orange juice, pomegranate seeds and rosemary sprigs.
- Optional: stir in a little honey or sugar to slightly reactivate fermentation.
- Close loosely – not airtight!
- Let ferment for 24–48 hours at room temperature.
- Visual check: slight carbonation, fruit pieces float slightly.

Bottling & Serving
- Fill into our glass bottles using our new bottle funnel with integrated sieve; fruit can then be reused.
- Seal bottles tightly, refrigerate.
- Before serving, optionally top up with some sparkling water – creates lively fizz.
- Serve in a glass with pomegranate seeds & a sprig of rosemary.
Questions & Answers about Probiotic Lemonade
Why isn't my water kefir fizzy?
If your water kefir isn't fizzy, there could be several reasons:
There is too little sugar or other nutrients in the second fermentation.
The ambient temperature is too low (below 20 °C).
The fermentation time was too short.
Tip: Add some sugar during the second fermentation and let the kefir sit at room temperature for 24–48 hours. This will allow it to produce enough carbonation.
How do I get more carbonation in my water kefir?
The tighter the bottle is sealed, the more pressure can build up and the fizzier your kefir will be.
Sugar or juice serve as "food" for the microorganisms. As they process it, carbon dioxide (CO₂) is produced, which makes your kefir fizzy.
How long does water kefir last?
In the refrigerator, water kefir generally stays fresh for 5–7 days.
The carbonation may diminish over time. Simply shake briefly or add some sparkling water to restore freshness.
Why does my water kefir turn cloudy?
Cloudiness is completely normal and results from the natural yeasts and lactic acid bacteria – this is not a defect.
Before drinking, you can swirl or strain the kefir briefly to make it clearer.
Which fruits are suitable for the 2nd fermentation?
Citrus fruits like blood orange, grapefruit, or lemon are ideal, but also berries, apple, or fresh herbs like mint or rosemary.
There are no limits to your creativity here – feel free to try new combinations!
