What is Water Kefir?
Water kefir is a naturally fermented drink based on water kefir grains, sugar, and dried fruits. It brings probiotic life to your glass and is the perfect base for homemade, sparkling lemonades. With our Starter Set, you get everything you need to easily get started at home.

Recipe: Water Kefir Lemonade with Rosemary & Grapefruit
Preparation for your drink
For this recipe, you will need active water kefir – preferably freshly fermented. Therefore, allow some lead time and prepare your water kefir at least 24–48 hours before making the sorbet. We show you how in our guide to making water kefir.
Ingredients
- 200 ml finished water kefir
- 100 ml pear juice or white grape juice
- 5–6 light berries (e.g., yellow raspberries, white currants, or pink gooseberries)
- 1 strip organic grapefruit zest
- 1–2 needles fresh rosemary
- Optional: ½ tsp birch sugar or light honey (for more fizz)
Preparation of the drink
(2nd Fermentation)
- Gently press the berries (do not crush).
- In a clean bottle, add:
- the light berries
- grapefruit zest
- rosemary needles
- optional: sweetener
- Fill with 200 ml water kefir and 100 ml juice.
- Seal the jar with our Fermentation Lid.
- Leave at room temperature for 24–36 hours (depending on taste & temperature).
- Then seal airtight and place in the refrigerator. Briefly vent ("burp") before opening.
- Serve
- Decorate with a fresh rosemary sprig and, if desired, a few light berries.
- Optional: 1 splash of mineral water for even more freshness.
