Recipe: Fire Cider – Ferment

Ingredients

for 1x Oleni Mason Jar | 0.5 L


  • 4 tbsp freshly grated horseradish (approx. 40–50 g)
  • 4 tbsp freshly grated ginger (approx. 40–50 g)
  • 4 cloves garlic, lightly crushed
  • 2 organic lemons, thinly sliced
  • 1 small red chili, cut into fine rings (with seeds, if a light spiciness is desired)
  • approx. 250 g raw honey (e.g., acacia honey)

Preparation


  1. Layer horseradish, ginger, garlic, lemon slices, and chili in a clean Mason Jar.
  2. Fill with honey until all ingredients are completely covered.
  3. Then stir with a clean spoon to ensure no air bubbles are trapped. Then place the glass weight on top of the mixture, so that your future ferment is completely covered with liquid.
  4. Loosely seal the jar with a fermentation lid and the screw band, and let it ferment at room temperature for 10–14 days.
  5. The fermentation lid allows gases to escape optimally through the opening.
  6. After fermentation, store in a cool, dark place.
