Recipe: Protein Lemon Bars

The best thing about these lemon bars is that they are not only incredibly flavorful but also easy to make. The almond flour crust provides a pleasant nutty note and simultaneously delivers valuable nutrients and proteins. Combined with fresh lemon juice, it creates a light, fruity filling that perfectly harmonizes with the delicate consistency of the crust.


This recipe is also ideal for preparing and storing, so you always have a protein-rich snack on hand – whether for coffee, after a workout, or just for a little coffee or tea break.

Ingredients


Crust

  • 2 1/4 cups almond flour
  • 1/4 cup coconut oil (liquid)
  • 2 tbsp maple syrup
  • Lemon zest
  • 1 pinch of salt

Topping

  • 4 eggs
  • 2/3 cup powdered sugar
  • Juice of 2-3 lemons
  • 1/4 cup almond flour

Preparation


Preheat the oven to 180°C (350°F). First, mix all the ingredients for the crust in a mixing bowl until a uniform mixture is formed. Then press the dough into a baking dish; our Storage Container | Square L | 2.6 L is particularly well-suited for this, and pre-bake it for about 15 minutes.


While the crust is in the oven, you can mix the ingredients for the lemon topping. Once the crust is lightly golden brown, spread the filling evenly over it and return the dish to the oven.

Bake the lemon bars for another 10–15 minutes until the filling is set. Afterward, be sure to let them cool for at least 2 hours so that the bars firm up and can be cut perfectly.
