Recipe: Lemon Cake with Olive Oil & Lavender
Ingredients
For the dough
- 250 g natural yogurt or Greek yogurt
- 250 ml mild olive oil
- 300 g sugar
- 5 eggs
- 325 g flour
- 1 packet baking powder
- Zest of 2 organic lemons
- Juice of 1–2 lemons (approx. 60 ml)
- 1 pinch of salt
For the finish
- Powdered sugar
- Lemon juice
- Thin lemon slices (untreated)
- A few lavender blossoms or small fresh lavender sprigs
Preparation
1. Preparation
- Preheat oven to 180°C top/bottom heat.
- Lightly oil or butter the Food Storage Container | Square | L | 2.6 L.
2. Prepare the dough
- In a mixing bowl, whisk yogurt, olive oil, sugar, lemon zest, and lemon juice until smooth.
- Beat in eggs one at a time.
- Mix flour, baking powder, and salt, then stir briefly until a smooth dough forms.
3. Baking
- Pour the dough into the prepared food storage container.
- Bake in the preheated oven for 45–55 minutes.
- Perform a skewer test – if the skewer comes out clean, the cake is ready.
- Let the cake cool in the food storage container and seal airtight.
4. Glaze & Decoration
Lemon Glaze
- Mix powdered sugar with a little lemon juice until a thick glaze forms.
- Spread evenly over the cooled cake.
Decoration
- Place thin lemon slices lightly into the still-wet glaze.
- Decoratively arrange lavender blossoms or small lavender sprigs.
