The Best Sourdough Toasties - Easily Homemade

Preparation

Ingredients (for approx. 10 toasties)

For the main dough

  • 400 g wheat flour (type 550)
  • 100 g active sourdough starter
  • 10 g salt
  • 5 g sugar
  • 150 ml milk (lukewarm)
  • 100 ml water (lukewarm)
  • 25 g butter (soft, in small pieces)

For frying

  • A little flour for dusting
  • Neutral oil or butter for the pan

Preparation

1. Prepare and rest the dough

  1. Place flour, sourdough, salt, sugar, milk, and water in a bowl and knead into a smooth dough.
  2. Gradually knead in the butter until fully incorporated.
  3. Cover the dough and let it rest at room temperature for 6-8 hours (or overnight in the refrigerator for even more flavor).

2. Shape and rest

  1. Place the dough on a floured surface and divide into 10 equal pieces.
  2. Form each piece into a ball, then flatten until it has the typical toastie shape (approx. 1.5 cm thick).
  3. Place the dough pieces on baking paper, cover with a cloth, and let them rest for 1 hour.

3. Fry the toasties

  1. Heat a non-stick pan over medium heat and add a little oil or butter.
  2. Place the toasties in the pan (not too many at once!) and cook for approx. 3-4 minutes per side until golden brown.
  3. After baking, let them cool on a rack.

Tip: If they are still too soft, the toasties can be baked for 5-10 minutes at 180°C (top/bottom heat) in the oven.
