Recipe: Mini Blood Orange-Date Cupcakes
4 servings baked and served directly in the Ripple Mason Jar | Wide | 0.25 L
Ingredients (for 4 pieces)
For the Cupcakes
- 150 g soft butter
- 150 g sugar
- 2 large eggs
- 150 g flour
- 1 tsp baking powder
- 1 pinch of salt
- 1 tsp freshly grated ginger
- Zest of 1 organic blood orange
- 1 small blood orange, thinly sliced
- 100 g soft dates, finely chopped
For the Blood Orange Syrup
- Juice of 1 blood orange
- 1–2 tbsp sugar
Preparation
Prepare the dough
Beat butter and sugar for 3–4 minutes until light and creamy.
Stir in eggs one at a time.
Fold in flour, baking powder, and salt briefly.
Incorporate ginger, dates, and orange zest.
Prepare the jars
Grease the four jars.
Fill the jars
Info: fill a maximum of ⅔ full → the dough will rise significantly. Distribute the dough evenly among the four jars. Place 1–2 very thin blood orange slices on top of each.
Baking
- Oven: 160 °C top/bottom heat
- Place jars in the cold oven.
- Bake for 28–34 minutes.
- Leave in the turned-off oven for 5–7 minutes, then remove. The cupcakes should be golden brown, toothpick test: clean.
Prepare the syrup
Reduce blood orange juice with sugar for 3–5 minutes until slightly thickened.
Finish
Drizzle the warm syrup over the warm cupcakes (1–2 tablespoons per jar) and then serve the cupcakes.
