Sweet dates, creamy tahini, and crunchy pistachios unite to form small power bites – rich in fiber, minerals, and healthy fats. Dark chocolate rounds off the whole with antioxidant polyphenols and provides a mood boost. Ideal as a meal prep snack for stable energy and healthy enjoyment.

This recipe is super easy and guaranteed to succeed – especially if you use your Lieblingsglas ice cube tray. This way you can easily make 18 uniform cubes that you can portion perfectly.
Ingredients
For the base
70 g fine rolled oats
50 g ground almonds
6–8 Medjool dates, pitted
1 tbsp coconut oil (melted)
1 pinch of salt
Optional: ½ tsp cinnamon or vanilla
For the Tahini Cream
40 g soft butter (or plant-based alternative)
80 g light tahini
½ tsp fine salt
Toppings & Finish
50 g pistachios, coarsely chopped
150 g dark chocolate (sugar-free)
Sea salt flakes
Preparation

Prepare the base
- If necessary, briefly soak dates in hot water, then drain.
- Process all base ingredients in a food processor to form a pliable mixture.
- Press firmly into the ice cube tray.

Apply the tahini layer
- Cream butter with tahini and salt until smooth.
- Spread over the base and smooth it out, for example, with our dough scraper

Incorporate pistachios
- Evenly sprinkle a portion (approx. 30 g) of the chopped pistachios over the tahini layer and press lightly.

Melt and pour chocolate
- Melt chocolate in a bain-marie.
- Pour chocolate over and smooth it out.

Add toppings (Finish)
- Sprinkle remaining pistachio pieces & sea salt flakes onto the still-liquid chocolate.
- Insert the ice cube tray and place in the freezer until the chocolate is completely firm. Then remove and let thaw for 5 minutes before pulling the lever.
