Recipe: Raspberry Oatmeal Bake

Ingredients


  • 200 g rolled oats
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 pinch of salt
  • 2 ripe bananas, mashed
  • 220–260 ml plant-based milk (depending on consistency)
  • 60 ml maple syrup
  • 2 tsp vanilla extract (or vanilla sugar)
  • 150–200 g raspberries (fresh or frozen)
  • 2–3 tbsp chocolate chips


Preparation


  1. Preheat oven

    Preheat to 180 °C (350 °F) top/bottom heat.

  2. Prepare pan

    Lightly grease the Food Storage Container | Square | 2.6 L (oven-safe) or line with parchment paper (recommended for easy removal later).

  3. Mix dry ingredients

    Combine oats, baking powder, cinnamon, and salt in a mixing bowl.

  4. Stir wet ingredients

    Whisk mashed bananas with plant-based milk, maple syrup, and vanilla until smooth.

  5. Combine mixture

    Add wet ingredients to dry ingredients and stir to form a thick mixture.

    Consistency: like very thick porridge. If too firm, add milk a little at a time.

  6. Pour and top

    Pour the mixture into the container and smooth with a dough scraper.

    Distribute raspberries evenly on top and gently press them in. Add chocolate chips.

  7. Bake

    Bake for 25–35 minutes (depending on the height of the pan) until the surface is firm and lightly browned.

  8. Cool and cut

    Let cool completely, then cut into strips or pieces and transfer to stainless steel containers.
