Recipe: Radicchio Kale Salad
Radicchio and kale are two winter heroes that not only boast nutrients but also have a lot to say flavor-wise. Brief grilling softens their bitter notes – perfect in combination with sweet-sour orange and crunchy hazelnuts. This makes the salad not only particularly aromatic but also a colorful change in the gray season.

Ingredients
1 small head radicchio (approx. 400 g), quartered
100 g kale leaves, roughly torn
2 tbsp olive oil
Salt and black pepper
2 oranges
60 g hazelnuts, toasted and coarsely chopped
½ small red onion, very finely sliced
Fire Cider Dressing
- 2 tsp Fire Ferment (horseradish-ginger-honey ferment)
- 4 tbsp olive oil
- 2 tbsp white wine vinegar or apple cider vinegar
- Juice of 1 orange (juice directly with the Lieblingsglas lemon squeezer)
- 1 tsp Dijon mustard
- ½ tsp turmeric (optional, for golden hue)
- Salt, pepper
Preparation
-
Grill radicchio and kale
Preheat oven to high heat. Place radicchio quarters and kale leaves in a square food storage container, drizzle with olive oil and lightly salt. Grill for 4–6 minutes until edges are slightly charred and leaves are tender.
-
Prepare oranges
Squeeze one orange (juice for the dressing), segment the other.
-
Whisk dressing
Prepare the dressing directly in a small Ripple Mason Jar (approx. 120–150 ml):
Freshly squeeze orange juice with the lemon squeezer, then add Fire Ferment, mustard, vinegar, olive oil, turmeric, salt, and pepper. Close the jar and shake vigorously until a creamy emulsion forms. Store dressing in the refrigerator until serving.
-
Serve salad
Arrange grilled radicchio and kale on a plate, top with orange segments and onion. Sprinkle with toasted hazelnuts.
Drizzle dressing fresh over the salad or serve it alongside in the Mason Jar.
Enjoy your meal!
