Fermented Cucumbers


for 1x Oleni Mason Jar | 1 L

Ingredients

  • 700 g small pickling cucumbers
  • 750 ml water
  • 1 tbsp salt (approx. 15 g)
  • 2 sprigs fresh dill
  • 1 sprig dried dill
  • 3 garlic cloves, lightly crushed
  • 2 bay leaves
  • 5 black peppercorns
  • ¼ chili pepper (optional)
  • ½ tsp mustard powder/mustard seeds

Preparation

  1. Soak cucumbers in cold water for 4–5 hours to keep them firm.
  2. Clean and sterilize the Oleni Mason Jar | 1 L thoroughly.
  3. Place spices, dill & garlic at the bottom.
  4. Pack cucumbers tightly.
  5. Dissolve salt completely in water and pour over until everything is covered.
  6. Loosely close the jar and ferment at room temperature for 3 days.
  7. Then store in a cool place.

Ingredients (for 2 glasses)


Kitchen utensils: Glasses, Lemon squeezer, Ice cube tray, Can

  • 180 ml tequila
  • 180 ml fermented cucumber brine (see cucumber recipe)
  • 180 ml orange liqueur (e.g., Triple Sec or Cointreau)
  • 120 ml fresh lime juice
  • 120 ml agave syrup or simple syrup
  • 1 jalapeño, deseeded and sliced
  • Coarse salt & Tajín (or chili salt) for the rim
  • Ice cubes
  • Cucumber slices & dill for garnish

Preparation


  1. Moisten glass rims with lime juice and dip into the salt-Tajín mixture.
  2. Shake all ingredients (except ice and garnish) vigorously in a shaker.
  3. Strain into two glasses filled with ice.
  4. Garnish with cucumber slices & dill.
