Protein-Rich Peanut Bites – Easy Meal Prep Recipe for Healthy Snacks

Recipe: Protein-Rich Peanut Bites
The bites are not only super delicious but also real nutrient powerhouses:
- Protein-rich: Almond flour and peanut butter provide valuable plant-based protein that keeps you full longer.
- Healthy Fats: Almonds, peanuts, and the oil contain monounsaturated fats that are good for the heart and circulatory system.
- Low Sugar: Thanks to honey as a natural sweetener, the bars remain consciously low in sugar.
- Antioxidants: Dark chocolate (at least 80%) provides extra polyphenols that can fight free radicals in the body.
Ingredients for approx. 12 bars
- 250 g almond flour
- 55 g rapeseed oil or coconut oil
- 80 g honey
- 180 g peanut butter
- Handful of peanuts
- 1 bar dark chocolate (min. 80%)
Preparation
- Bake the base: Mix almond flour, oil, and honey well in a mixing bowl. Press the mixture with a dough scraper into a Rectangular Storage Container | Large | 2.6 L and bake in the oven at 180°C until the base is golden brown (approx. 10–20 minutes).
- Prepare the peanut layer: While the base cools, gently warm the peanut butter so it spreads more easily. Roughly chop the peanuts on the cutting board and spread them along with the peanut butter over the base. Then chill in the refrigerator.
- Melt the chocolate: Pour the dark chocolate over the cooled peanut layer. Sprinkle a little coarse sea salt over it if desired.
- Finish: Let it harden in the refrigerator for approx. 30 minutes and cut into rough bars.
