Reliable Fermentation – How It's Done

For your mustard to turn out reliably, it's not just about the ingredients, but also the right accessories. Recipe: Fermented Mustard

Prep time: ~20 minutes

Fermentation time: 5–7 days

Ingredients


  • 50 g brown mustard seeds
  • 1 fresh red chili
  • 200 g yellow mustard seeds
  • approx. 15 g (¼ garlic bulb), finely chopped
  • ½ small lime (~25 g), in pieces
  • 500 ml water (for 2% brine)
  • 2 tsp (10 g) sea salt
  • Optional: 1 tbsp maple syrup or honey (for balance)
  • 50 ml of the fermentation brine (for consistency)
  • Optional: 4 tbsp apple cider vinegar (for extra acidity after fermentation)

Instructions


  1. Prepare brine:

    Dissolve 10 g salt in 500 ml filtered water (2% brine).

  2. Ferment:

    • Place yellow and brown mustard seeds in a sterilized jar.
    • Add chili, lime, and garlic.
    • Pour brine over everything, completely covering the mustard seeds.
    • Weigh down with a glass weight, screw on the fermentation lid.
    • Ferment for 5–7 days at room temperature (18–22 °C). Check daily for bubbles/smell.
  3. Puree & season:

    • Drain the liquid (save the brine).
    • Puree mustard seeds with 2 tbsp brine, add more brine as needed for desired consistency.
    • For smooth mustard, blend longer; for coarse-grained, blend shorter. (please a bit coarser for the shoot)
    • Optional: Stir in maple syrup/honey and apple cider vinegar. Adjust taste with salt/vinegar.
  4. Bottling & Maturation Time:

    • Pour into sterilized jars (Ripple 0.25) and store in the refrigerator.
    • The full, complex flavor develops after 1-2 weeks.

Mold-free fermentation? Tips and golden rules you should follow

Mold almost always occurs during fermentation when vegetables or fruits are not completely covered by the brine. At the surface, oxygen comes into contact with the food – and that's exactly where mold can easily grow.

With our glass weight, you can easily avoid this: it securely holds your ferment under the liquid, fits perfectly into the Mason jar, and can be easily removed after fermentation. This way, everything stays reliably submerged in the brine, mold has no chance, and you can simply enjoy the taste.


Which salt is right for my ferments?

For ferments like mustard, you need a pure salt that contains no additives. Natural varieties like sea salt or rock salt without anti-caking agents or iodine are best, as these substances can inhibit microorganisms and disrupt the process.

The salt not only adds flavor but also protects the mustard from unwanted bacteria and creates the perfect environment for fermentation.

Our recommendation: Fine sea salt, because it distributes evenly and reliably supports fermentation.
