Classic Butter (with the Butter Maker)

Ingredients (yields approx. 100g butter):

  • 300 ml whipping cream (min. 32% fat)
  • 1 pinch of salt
  • cold water
  • optional: salt & herbs to taste

  1. Remove the cream from the refrigerator at least 2 hours before preparation to allow it to reach room temperature. In the meantime, thoroughly clean the jars and butter maker.
  2. Pour the cream into your Mason jar and screw the butter maker on top.
  3. Hold the butter maker by the top handle and turn the crank for about 6–12 minutes (depending on the cream and temperature). The cream will first become frothy, then firmer – and finally, the buttermilk will separate from the butter.
  4. Once the butter and buttermilk have separated, unscrew the Butter Maker and carefully pour the buttermilk into a second jar.
  5. Place the butter in a bowl with cold water. Gently knead the butter with clean hands to press out any remaining buttermilk. Repeat this twice.
  6. Transfer the butter to a clean jar and season with salt and herbs as desired. Let it firm up in the refrigerator. 
  7. Shelf life: approx. 2 weeks in the refrigerator.

Preparation


  1. Prepare butter – let soften at room temperature.
  2. Roast garlic – Preheat oven to 180°C (fan-assisted). Cut off the top of the garlic head, drizzle with a little olive oil, and bake for approx. 20 minutes until the cloves are soft and golden brown.
  3. Remove garlic – Squeeze out the soft cloves (approx. 4–5 pieces, save the rest).
  4. Mix – Wash herbs and sprouts, blend until creamy with the prepared butter and garlic.
  5. Season – Season with salt and enjoy!
