Freezing in a reusable ZipBag

Recipe: Frozen Pineapple Margarita

What you need:

  • 2 cups pineapple
  • 60-90 ml tequila
  • 30 ml Cointreau
  • 30 ml lime juice
  • 50 g granulated sugar
  • 60 ml of water
  • 1 tablespoon Tajin chili
  • zip bag (in size M)

And this is how it works:

  1. Remove the peel of the pineapple and cut the flesh into large cubes. Then freeze these cubes in your reusable ziplock bag for at least 3 hours (preferably overnight).
  2. In a small saucepan, heat the sugar and water over medium heat, stirring until the sugar is completely dissolved. Remove from heat and allow the syrup to cool before using. This will make about 60ml of simple syrup, depending on how long you let it cook.
  3. In a blender, combine the pineapple, tequila, Cointreau, lime juice and syrup. Blend until smooth. Pour the frozen cocktail into your Oleni glass and garnish with a lime slice. Cheers!
