How does fermentation work?

Recipe: Spring Water Kefir (Second Fermentation)

Important first


For this recipe, you will need finished water kefir after the 1st fermentation, i.e., already strained and flavored (e.g., with lemon, ginger, and dates).


Total amount: approx. 700 ml sparkling water kefir

Ingredients

  • 700 ml finished water kefir (after 1st fermentation)

  • 1 handful of apple and/or pear peels

  • A few lemon zests

  • ¼ tsp anise seeds

  • ¼ tsp coriander seeds

  • 2 juniper berries

  • Violet blossoms

Preparation (2nd fermentation)


  1. Lightly crush spices
    Lightly crush anise, coriander, and juniper berries – not too fine.

  2. Fill bottle
    Add spices, apple/pear peels, and lemon zests to a glass bottle.

  3. Fill with water kefir
    Fill to about 3 cm below the neck of the bottle.

  4. Seal & ferment
    Seal the bottle and ferment for 1–3 days at room temperature. Taste regularly until the flavor & carbonation are right.

  5. Add violets
    Add violets only at the end or just before serving to keep them fresh.

  6. Chill
    Once the taste is right, place the bottle in the refrigerator.

  7. Serve with floral ice cubes
    Prepare ice cubes with flowers in our stainless steel ice cube mold and add when serving. Alternatively, pour into glass bottles for drinks and serve directly.
