Recipe: Fluffy Sourdough Pancakes

Ingredients for 8–10 servings


  • 4 eggs
  • 520 ml milk
  • 500 g sourdough (active)
  • 100 g skyr / Greek yogurt
  • 360 g flour
  • 30 g sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • ½ tsp vanilla extract
  • 60 g butter, melted

Preparation


  1. Whisk eggs briefly.

  2. Mix wet ingredients

    Stir eggs with milk, sourdough, yogurt, and optional vanilla extract until smooth.

  3. Mix dry ingredients

    Combine flour, sugar, baking powder, baking soda, and salt in a second bowl.

  4. Mix the batter

    Add the dry ingredients to the wet and stir briefly (do not overmix).

    Optional: Let the batter rest for 30–90 minutes before baking (add baking powder & baking soda just before), this intensifies the flavor.

  5. Stir in butter

    Add melted butter and stir it in.

  6. Bake

    Heat a coated pan with a little butter or neutral oil over medium to high heat.

    Cook pancakes in portions for 2–3 minutes per side until golden brown.
