Vegan Carrot Lox – The perfect plant-based alternative!

The wafer-thin carrot strips are first steamed to achieve a tender, firm-to-the-bite texture. Afterwards, the refined marinade absorbs its flavor – creating the typical, slightly smoky and ocean-like aroma reminiscent of traditional salmon.

Ingredients for your vegan lox
- 3 large carrots
- 1 tbsp Nori flakes (crush Nori sheets for this)
- 2 tbsp Tamari (or soy sauce)
- 2 tbsp rice vinegar
- 2 tbsp neutral vegetable oil
- 1 tbsp flaxseed oil
- 1/2 tsp liquid smoke
- 1/4 tsp garlic powder
- 1/4 tsp sea salt
Preparation

Prepare the carrots
Peel the carrots and cut them into thin strips using a vegetable peeler or a mandoline.

Steam
Place the carrot strips in a steamer or a heatproof sieve over a pot with a little water. Steam with a lid for approx. 5 minutes until they are soft but still firm to the bite.

Make the marinade
In an Oleni Mason Jar, mix Nori flakes, Tamari, rice vinegar, vegetable oil, flaxseed oil, liquid smoke, garlic powder, and sea salt.

Fill into the Mason Jar
Place the steamed carrot strips into a Mason Jar 1L and pour the marinade evenly over them using our funnel attachment. Close the jar and shake gently to ensure the marinade is well distributed.

Let it infuse
Place the Mason Jar in the refrigerator and let it infuse overnight at least, so the carrots absorb the flavor optimally.

Serve
Serve the vegan carrot lox on our toasties with a poached egg.
