Recipe: Fermented Mango-Chili Chutney

Ingredients 


For a Ripple Mason Jar | Wide | 0.6 L

  • 2 ripe mangoes, peeled and diced
  • 1 red onion, finely diced
  • 1-2 fresh red chilies, finely chopped (depending on desired heat level)
  • 2 cloves garlic, finely chopped
  • 1 tbsp fresh ginger, finely grated
  • 50 g dried cranberries
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp mustard seeds
  • 1 tbsp lime juice
  • 15 g salt (approx. 2% of the total weight of ingredients)
  • 500 ml water

Instructions


  1. Prepare mangoes and onions: Cut the mangoes and onions into small cubes and then store them in a food storage container.
  2. Add spices and chili: Add chilies, garlic, ginger, raisins or cranberries, cumin, coriander seeds, and mustard seeds and mix everything well.
  3. Prepare brine: Dissolve the salt in water to create a brine. Then add the lime juice.
  4. Ferment: The mixture can now be filled into a Ripple Mason Jar | Wide | 0.6L using our funnel. Lightly press the mixture down so that no air bubbles form. Pour the brine over it until the chutney is completely covered. Now use a glass weight to keep the ingredients submerged in the liquid.
  5. Close the lid: Loosely seal the jars with our fermentation lid.
  6. Allow to ferment: Let the chutney ferment for 3-5 days at room temperature. Check daily for bubble formation and for the taste to become slightly sour and spicy. If necessary, slightly open the lid to release pressure.
  7. Storage: After fermentation, store the chutney in the refrigerator, where it will keep for several weeks.
