Fermented Mango Chili Chutney in a Jar: Recipe & Instructions for Making Your Own
A Jar Full of Flavor & Health
A good chutney is like a little taste magic: sweet, spicy, and slightly hot – the perfect accompaniment to bowls, curries, cheese boards, or simply as a dip.
The fermented mango-chili chutney combines the sweetness of ripe mangoes with a subtle hint of chili and the spice of cumin and coriander seeds. Fermentation creates natural probiotic cultures that support gut health and aid digestion – perfect for the holiday season. This chutney is a truly special taste experience and is ideal as a gift in a jar or as a flavorful accompaniment to your Christmas menu.
Why ferment?
Fermentation is a process where food is preserved by microorganisms such as lactic acid bacteria.
This has several advantages:
Naturally preserved – without any sugar or vinegar.
Good for gut flora – live cultures support your digestion.
More flavor depth – sweet, sour, spicy, and slightly tangy all at once.
This transforms a simple mango-chili mixture into a true taste experience that can be stored in a jar for several weeks.
Recipe: Fermented Mango-Chili Chutney
Ingredients
For a Ripple Mason Jar | Wide | 0.6 L
- 2 ripe mangoes, peeled and diced
- 1 red onion, finely diced
- 1-2 fresh red chilies, finely chopped (depending on desired heat level)
- 2 cloves garlic, finely chopped
- 1 tbsp fresh ginger, finely grated
- 50 g dried cranberries
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp mustard seeds
- 1 tbsp lime juice
- 15 g salt (approx. 2% of the total weight of ingredients)
- 500 ml water
Instructions
- Prepare mangoes and onions: Cut the mangoes and onions into small cubes and then store them in a food storage container.
- Add spices and chili: Add chilies, garlic, ginger, raisins or cranberries, cumin, coriander seeds, and mustard seeds and mix everything well.
- Prepare brine: Dissolve the salt in water to create a brine. Then add the lime juice.
- Ferment: The mixture can now be filled into a Ripple Mason Jar | Wide | 0.6L using our funnel. Lightly press the mixture down so that no air bubbles form. Pour the brine over it until the chutney is completely covered. Now use a glass weight to keep the ingredients submerged in the liquid.
- Close the lid: Loosely seal the jars with our fermentation lid.
- Allow to ferment: Let the chutney ferment for 3-5 days at room temperature. Check daily for bubble formation and for the taste to become slightly sour and spicy. If necessary, slightly open the lid to release pressure.
- Storage: After fermentation, store the chutney in the refrigerator, where it will keep for several weeks.
