Here, the kombucha is brewed and fermented, while the small Oleni Mason Jar | Wide | 0.5 L is used to store future SCOBYs (which form automatically with each fermentation) and your starter liquid. This allows you to continuously produce probiotic drinks in your home.

The kombucha starter, also known as the kombucha mother, is the key to successful fermentation. Our starter set contains 100 ml of this liquid, which is used for immediate kombucha production. Your SCOBY will automatically form during your first batch. Everything you need to get started is already in our starter liquid: This allows you to ferment real kombucha right from the first batch, which may initially taste a bit milder. During the first fermentation, a SCOBY automatically forms, which further develops with each subsequent batch and supports the fermentation process long-term.

Brewing Kombucha – Step-by-Step

Step 1: Kombucha Starter

Boil 200 ml of water and steep 2 tsp of black tea in it for about 5–10 minutes. Then remove the tea and dissolve 70 g of sugar in it. Pour the sweetened tea into your Mason jar and fill it with cold water until there is a total of 1 liter of liquid in the jar. Now let the tea cool completely to room temperature.

Step 2: Starter Fluid

Once the tea has completely cooled, add 100 ml of our Kombucha starter liquid. The living bacterial and yeast cultures it contains are particularly sensitive to heat – so the mixture should never be hot. Stir everything carefully to ensure the starter culture is evenly distributed.

Step 3: Fermentation

Now place the kefir lid (including cover) on your Mason jar and let the culture ferment for 7–12 days at room temperature. During fermentation, your first kombucha will develop its typical slightly sour taste and live cultures. Store the jar in a light-protected place without direct sunlight.

Over time, a thin film may form on the surface – this is a SCOBY, which naturally develops during fermentation. You can save this, along with some kombucha liquid, for further batches and make new kombucha again and again.

The longer your kombucha ferments, the less sweet and more intense its taste will become. Once it tastes pleasantly fresh and slightly sour, you can enjoy it or continue directly with a second fermentation.
