Ingredients

  • 300 g fresh cranberries
  • 1 small sprig of fresh rosemary
  • 1 tsp sea salt
  • 1 tbsp maple syrup
  • Filtered water
  • Ripple Jar, glass weight, fermentation lid

Preparation

  1. Prepare cranberries: Wash the cranberries and fill them into the Ripple Jar. They can be lightly pricked to help them ferment better, but do not crush them.
  2. Make brine: Mix water, sea salt, and maple syrup in an Oleni Jar until the salt has dissolved.
  3. Add rosemary: Place the fresh rosemary sprig into the jar with the cranberries.
  4. Start fermentation: Pour the brine over the cranberries until they are completely covered. Place a glass weight on top of the cranberries to keep them submerged in the brine.
  5. Close loosely: Place the fermentation lid on.
  6. Fermentation process: Leave the jar in a cool, dark place for 3-5 days. Check daily to ensure the cranberries are completely covered by the liquid.
  7. Maturation time: Once the desired level of fermentation is reached, place the jar in the refrigerator to slow down the fermentation process.

Roasted Maple Carrots

Roasted carrots in maple syrup, refined with fermented cranberries from the previous recipe, combine the best of sweetness and acidity in one dish. Ingredients

In combination with fermented cranberries from the previous recipe.


  • 500 g carrots
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper
  • A handful of fresh parsley
  • A handful of sliced almonds
  • Handful of fermented cranberries from previous recipe

Preparation

  1. Preheat the oven to 220 °C.
  2. Peel the carrots and halve them lengthwise (or quarter them if they are very thick).
  3. In a bowl, mix maple syrup, olive oil, cumin, coriander, salt, and pepper. Add the carrots and mix well.
  4. Place the carrots on a baking sheet and roast for about 25-30 minutes, until they are soft and caramelized.
  5. Remove the roasted carrots from the oven, sprinkle with fermented cranberries, and garnish with fresh parsley and sliced almonds.
