Fermentation time: 2–4 weeks

Ingredients
- 8–10 untreated organic lemons
- 15 g salt (3% brine)
- 500 ml water
- 2–3 bay leaves

- Fermentation airlock
- Glass weight
- Wooden tamper
- Knife & cutting board
Preparation
Prepare the lemons:
- Wash lemons thoroughly and cut into quarters or thick slices.
Prepare the salt:
- Mix the lemons with a little salt and let them stand briefly for the juice to extract.
- Dissolve the remaining salt in 500 ml of water (3% brine).
Layer the lemons:
- Layer the lemons and bay leaves in the jar and press down lightly.
- Fill with the prepared brine until the lemons are completely covered.
Use fermentation airlock & weight:
- Place a glass weight on the lemons to keep them submerged in the liquid.
- Seal the jar with a fermentation airlock so that any gases can escape.
Start fermentation:
- Let the jar ferment in a dark, warm place (approx. 18–22 °C) for 2–4 weeks.
- After 1 week, taste regularly – the lemons should become milder and more aromatic over time.
Post-fermentation & storage:
- Once the lemons have reached the desired taste, replace the fermentation airlock with a normal airtight lid.
- Store in the refrigerator or a cool pantry – they will keep for several months!
- Now you can add olive oil to soften the lemons and round off the flavor.
