The perfect yeast plait for your Easter brunch

Recipe

Ingredients:

  • 500 g flour (type 405 or 550)
  • 80 g sugar
  • 1 pinch of salt
  • 1 packet of dry yeast (or 42 g of fresh yeast)
  • 150 ml lukewarm milk
  • 80 g soft butter
  • 1 egg (size M)
  • zest of 1 organic lemon (optional)
  • 1 egg yolk (for brushing)
  • almond flakes (optional, for sprinkling)

Preparation:

  1. In a large bowl, mix the flour with the sugar and salt. Sprinkle the dry yeast on top (if using fresh yeast, dissolve it in the lukewarm milk first).
  2. Slowly pour the lukewarm milk into the flour mixture and knead with a wooden spoon or your hands until you have a smooth dough.
  3. Add the soft butter and egg and knead well until you have a smooth dough. Optionally, add the zest of an organic lemon and knead well.
  4. Cover the dough and let it rise in a warm place for about 1 hour, until it has roughly doubled in volume.
  5. After rising, knead the dough again briefly on a lightly floured work surface and divide it into three equal parts.
  6. Roll the pieces of dough into strands and braid them together to form the typical plait. Alternatively, you can braid the dough into a ring.
  7. Place the finished plait on a baking tray lined with baking paper and cover again. Let it rise for another 30 minutes.
  8. Preheat the oven to 180°C (fan oven).
  9. Whisk the egg yolk and brush it over the plait and sprinkle with flaked almonds.
  10. Bake the yeast plait in the preheated oven for about 25-30 minutes, until it is golden brown and sounds hollow when you tap the bottom.
  11. Take the finished yeast plait out of the oven and let it cool on a wire rack.
