Date Water: A Natural 1-Ingredient Boost for Your Sourdough Starter

I'd love to share my ultimate secret tip for your sourdough starter with you.
You've done everything right – but your sourdough starter just doesn't want to get active?
Don't worry, this happens even to experienced bread bakers. If your starter shows too little activity, you can easily boost it naturally – with a little trick of mine: natural date water!
What is date water – and why does it help your starter?
Date water is simply water in which dried dates are soaked for several hours (approx. 1-2 days). During this process, the dates release their natural sugar & yeast as well as minerals and enzymes into the water – exactly what the microorganisms in your sourdough starter love!
Thanks to the additional energy from the date water, which you can add to your starter, the microbes will kick off, bubbles will form faster – and your starter will become more active, airier, and more aromatic.
How the date water hack works
You will need:
- 2–3 dried dates (without additives)
- 250 ml lukewarm water
- A jar for soaking – e.g. our storage containers or our Mason Jars
Here's how:
- Soak dates in lukewarm water overnight (at least 12 hours).
- The next day, use the water (without dates) to feed your starter.
- Either for the first time setting it up or to reactivate it after a break.
- From the 3rd or 4th day, you can continue with normal water.
Tip: In our jars you can observe the starter perfectly – you'll see exactly when it becomes active and doubles in size.
