Recipe: Spinach-Lentil Pancakes with Cashew-Herb Dip

Ingredients:
- Olive oil
- Spinach
- Avocado
- Herbs
- Remove lentil batter from the fridge.
- Cook batter in a pan with 1 tsp olive oil, in portions (2 minutes per side).
- Wilt spinach slightly in a pan without fat.
- Take cashew-herb dip out of the fridge.
- Fill pancakes with spinach and sliced avocado, optionally garnish with herbs or sprouts, and serve with the cashew-herb dip.
